Doubles is made with two flat fried breads, hence the name Doubles, and curried chick peas, commonly called channa, is sandwiched between the two breads. The bread is made of flour, saffron, which gives Doubles it's yellow color,baking powder, and salt. It is flattend to a thin round disk about 3.5 inches in width. It is then fried until golden brown and paired with the channa. The channa filling is varient because there is no set recipe, therefore it can be just curried or mixed with curry and dahl (yellow split peas). Doubles are not limited to household and restaurant kitchens. There are Doubles vendors all across the country, selling Doubles out if a box, and even made fresh on the spot by a Doubles truck. The Doubles is fried on the spot, usually in a makeshift kitchen in the back of a pickup truck. Doubles from the Doubles truck is perfered over premade Doubles. The price for a Doubles currently range from $1.00 tt to $1.50 tt. Doubles is known as the breakfast of champions because is it consumed mainly in the morning by commuters on the way to work, school, or a river lime.
