Green tea is tea that has undergone minimal oxidation during processing.

Kukicha or Winter Tea consists of twigs and old leaves, pruned from the tea plant during its dormant season and dry-roasted over a fire. Popular as a health food in Japan and in the macrobiotic diet.

Oolong (烏龍茶) is a tea whose oxidation is stopped somewhere in-between green tea and black tea.

A number of health claims have been made for green tea, claiming that it has antioxidant properties.
